  • scoop yogurt in bowl or desired dish. I use a wine glass because I don't drink but what to feel fancy sometimes. LOL
    Wash your strawberries and blueberries. slice or chop your strawberries. I keep the leaves on they are definitely okay to eat but trim if you don't want them. Add to dish
    top off with hemp seed or any other protein like seeds or nuts.

A delicious cookie you can share or not, we won’t judge. I’ll bet y’all got the ingredients sittin’ right in your kitchen. Let’s get this ball rolling. Go ahead and pour the almond milk, the cookies will be done before it gets warm.

Let me take y’all down memory lane to one of my favorite place in South Carolina-my mamaw’s house. In the summertime we’d all jump on the back of the truck and ride down the road to to her house on the farm. We bounced along the old dirt road and the dust clouds would rise up behind us swirling and dancing around. Mamaw was one of those that always had sweets waitin’ on me when I got there. Old Bandit, the farm dog would meet me in the yard barking, jumping up and down excited to have company. I’d jump off the back of the truck, pushing my hair off my sweaty face while running for the old creaky screen door that slammed behind me as I ran into the kitchen. She’d put her hands on each side of my face and smile the biggest smile, kiss my forehead and give me the biggest hugs. I can feel her now wrapping her arms around me, my heart misses her.

 

The smell of fresh baked homemade chocolate chip cookies filled the house, but first I had to wash my hands-no dirty hands allowed at the kitchen table. Her cookies were like drops of sugary sunshine, I would be so excited. I don’t know why, but everything always tasted better at my mamaw’s house. 


Sittin’ at the table, legs swinging under the old oak kitchen chair, I was in heaven. The lace tablecloth, delicate and worn with age, I had always thought it was so fancy and must have costed so much. I would trace the lace with my fingers and there at the center, sat the old glass sugar bowl—a bowl that had seen generations come and go. It held more than just sugar; it held stories, laughter, and a taste of Mamaw’s love. I remember many times we’d sneak in the house and take a full bite of sugar from the bowl then back outside to play in the dirt.

“Are you ready for a cookie?” she’d asked bringing the entire plate of cookies to the table. You know what they say, spoiled by grandparents and that I was!!  The first chocolaty bite with a cold glass of milk was summer right there in my hands wrapped up in a chocolate chip cookie. With her apron still on you could see puffs of flour on the front she sat down to talk about my summer, was I ready to go back to school, have I been having fun, you know, grandma stuff. Whatever I didn’t finish would get wrapped up in tin foil and sent home with me to finish later. 

 

What a wonderful small trip down memory lane. Y’all! I didn’t want to bore you too much. It’s always amazing to me how food can take you to a time of such joy from our past with loved ones we no longer have. If you’re missin’ someone, make their favorite dish and think about the wonderful memories around the table.

 

Now I’m ready for some of them crunchy chocolate chip cookies, so let’s get started. The recipe is below and if I can make them, anyone can. Let me know how they turned out and if you you ate them all in one sittin’ like we did! I know!! We could’t help it.

Crunchy Vegan Chocolate Chip Cookies

Delicious crunchy vegan chocolate chip cookies made in minutes. One bowl, minutes to make, seconds to devour.

Ingredients

  • cup sugar (I use Stevia)
  • cup coconut oil (soft, not melted into liquid)
  • ¼ cup plant milk I used almond milk
  • 1 tsp pure vanilla extract
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ¼ cup sifted all purpose flour
  • ¼ tsp himalayan salt any fine grain salt will work
  • 1 cup vegan chocolate chips

Instructions

  • preheat oven to 350 F. Add parchment paper to cookie sheet or baking pan.
  • In a big bowl mix together your sugar and coconut oil until fully mixed. Have patience, it will eventually mix together.
  • Once fully mixed add in the vanilla and milk. Keep mixing' that sucker up.
  • Making sure it's fully mixed up add your dry ingredients. Flour, baking powder, and baking soda. Add a little at a time, it's easier to mix. Mix until a dough forms, it will look shiny and a little chunk. Nothing like a dough ball for bread.
  • You can now fold in your chocolate chips. I just throw them in and fold them with my hands. Why dirty up another utensil to wash? Right!!
  • Now roll those bad boys up into balls. You'll be able to get about 13 to 15 I guess. Depends on how big your balls are. HA! Line them up on yer cookie sheet.
  • Once you have all the balls on the sheet take a glass or use your hands, (remember we're keep the dishes to a minimum) and smash those bad boys. Smashing them makes them crispier.
  • Bake for around 11 to 15 minutes, it all depends on the oven honey, keep checkin' them. I like to keep adding minutes dependin' on how brown the tops are getting, I like mine crunchy.
  • Once you have them baked to your desired cookie likin's take 'em out and let 'em cool off.
  • Add a tall glass of plant milk or a cup of coffee and ENJOY!!!!

Notes

I sure do hope y'all enjoy these cookies and hope they got good and crispy for ya. Dip 'em in some almond milk or any plant milk, crumble them on some vegan ice cream, or heck have 'em with your coffee for breakfast. Ain't no bodies business how you eat your cookies. I just hope y'all love 'em as much as we did.

Hey Ya’ll! When you think about the South I’m sure sweet tea comes to mind. Funny story, I use to shoot weddings way back when and was hired to second shoot in Massachusetts. Anna, my friend and I packed and headed up North to stay the weekend for a wedding. Our first night there we decided to head out and photograph the area. It wasn’t long before our Southern accents were a hit everywhere we’d go. We had so many people wanting us to say “grits” and “sweet tea”. If we had a dollar for every time we got asked, we could have skipped shooting the wedding for money and flew back home. 

 

Sweet tea holds a special place in my heart as I’m sure it does to most Southerners. In the South I don’t care who you were, you were invited to have a glass of sweet tea if you stopped by. It reminds me of summer days and screen doors slamming closed. We had it for supper, family gatherings, and sittin’ on the porch in the afternoon watching the sun set across the field. For me, sweet tea is a taste of home and when I’m missing my momma and mamaw I make a big ‘ole pitcher and think about summer days in South Carolina. How ’bout we get to the recipe!

SWEET TEA VS. ICED TEA

What's the difference in sweet tea and iced tea?

Don’t get sweet tea confused with iced tea. If you go somewhere and you order sweet tea and they give you packs of sugar, it aint sweet tea. Sweet tea is made with the sugar in it, iced tea is sugar added. It ain’t the same!

How to Make Sweet Tea, Southern Style.

Y’all ready for some jaw droppin’ sweet tea? It’s all in the details, not really, it’s about the sugar dear. It all starts with the tea, we like Lipton tea but any good ‘ole strong black tea will work just fine. You’re gonna start off with yer pot of water and bring 4 cups to a boil. You ain’t gonna boil the tea bags so cut off the burner and put 3 big size tea bags in to steep awhile. Go sweep those cobwebs out of the corner while you wait. If you thinkin’ you might add some lemons, cut those up while you waitin’. In about 5 minutes it’s going to be good to go, don’t let it get too cool or you can’t dissolve the sugar. Pull out your tea bags (put them in the freezer, it’s great for puffy eyes) then pour your sugar in. Stir, Stir, and Stir some more until it’s all dissolved. Once you got that done you add some cold water, some ice, and put it in the fridge to chill. Once chilled, stir, pour over ice in a big ‘ole mason jar, add you a lemon slice and ENJOY. 

Use any black tea of your choice. I used Lipton tea bags.

Once your 

water comes to

a boil, turn it off. Add tea bags and let steep for 5 minutes.

add 1 cup of sugar to warm tea.

stir, stir until sugar has dissolved.

lemons add a nice zing to your tea. Add lemons to you glass, not before.

pour a tall glass of tea for yourself and enjoy!!!

How to make Sweet Tea

A southern home wasn't complete unless there was a picture of sweet tea in the fridge.

Equipment

  • 1 small sauce pan
  • 1 long handled wooden spoon
  • 1 gallon size pitcher

Ingredients

  • 4 cups water
  • 3 family size tea bags
  • 1 cup sugar (I use stevia)

Instructions

  • Bring 4 cups of water to a boil.
  • Put 3 tea bags in hot water and let steep for 5 minutes or longer.
  • Remove tea bags and add sugar to saucepan. STIR STIR STIR until all sugar has dissolved.
  • Pour tea in your gallon pitcher and add water. I add ice cubes that melt, it makes the tea cool off faster.
  • Stir tea with long handled spoon, add slices of lemon or mint and chill in fridge.
  • ENJOY!!

Notes

  • Your tea may be get stronger and sweeter as it sits in the fridge, you can add more water if needed.
  • Store your tea in the fridge. Drink before the week is out, it will taste sour.
  • If you like your tea super sweet, add more sugar to the recipe. If you don't want it too sweet, cut the recipe to 1/2 cup of sugar. 
  • Arnold Palmer tea. Add equal parts of lemonade to tea.

What is a Mamey?

A Mamey is a tropical fruit that grows in a tree that can reach 40 feet tall and is part of the Sapote family. Native to Mexico and Central America and can be found in parts of Florida. It is know for its unique flavor and creamy buttery texture. With its rough outer texture and football look you’d never guess the surprise that lies within its unappealing exterior.

How can I tell if my Mamey is ripe?

A non-ripe mamey will be hard to the touch. You can leave it on the counter and it will ripen off the tree. If your mamey is soft, it’s ready to enjoy.

How do I eat a Mamey?

Once you discover that your mamey is ripe and ready to enjoy just cut in half with a knife and toss the seed. You can eat it straight from the skin it’s in. You make a smoothie with it, enjoy some mamey ice cream, or add it in with other fruits in a smoothie bowl.

What does a Mamey taste like?

The texture is like butter and the taste is OH MY GOSH so good. To us it taste like a sweet potato pie mixed with a little pumpkin pie, brown sugar and just love!!

Is Mamey fruit healthy?

Notes

  • If your smoothie is too thick add more plant milk until it's to the consistency you like it.
  • If you can't find fresh mamey you can sometimes find frozen mamey in the freezer section of your grocery store.
